Nikki Haggerty purchased the team in 2020, just before everything got shut down for COVID-19. The time was right to add another team to her list of accomplishments. The team has been around for many years with a few different owners, and when Nikki purchased it, it came with all of the original recipes. With that being said, she didn’t change much because they already had a good product. So what you used to get from the Armadillo’s booth, is still available today.

Nikki Haggerty, owner and operator, has been on the road doing ribfests for the last 30 years. She took the knowledge she learned from her father and while working for other Texas teams to start her own team and hit the road with a team named for her son Austin. She still uses the texas style recipes to sell her food across the country.

BigShow BBQ is a Kansas City-style BBQ team with a proven track record of serving award-winning ribs, sauces, and smoked meats at top rib festivals across the country. Using their years of experience working with some of the biggest names in competition BBQ, such as Chicago BBQ, Texas Lightning, Aussom Aussie BBQ and Checkered Pig, they bring our big flavors to every event. They have been fortunate enough to win Best Ribs in Akron and Best Sauce in Michigan, and they are eager to showcase our authentic, competition-style BBQ to new audiences!

Solomon Williams, more commonly known as the King, combined his love of people, his honor of heritage and his passion for barbecuing to create a food masterpiece. Today, Carolina Rib King sells their meats and sauces throughout North America while competing with our competition cooking team, which is home-based in Spartanburg, South Carolina. Though we do not have a restaurant, we serve countless customers and thousands of pounds of succulent meat each weekend.

The original owner, Tom Ferguson, helped to start many of these ribfests. He had been on the road for over 35 years when he retired and sold the team to his daughter, Nikki Haggerty. She now continues in his stead, traveling the country to bring Chicago BBQ to the fans that have followed us all these many years.
